
This is a very simple but delicious dish for anyone to make quickly and easily. It is commonly consumed as a side dish but can be had on its own. It is very popular in Bangladesh and is known as ‘aloo baazi’ or ‘Niramish’.
Ingredients:
8-10 new potatoes
1 Large onion, finely chopped
4 green chillies, more if preferred
Freshly chopped coriander leaves
3-4 tbsp of vegetable oil
1 ½ tsp of salt
1 tsp turmeric powder
Method:
Peel and slice the potatoes into thin pieces and then into fine strips as if they have been shredded, then wash and drain.
In a frying pan heat the oil and fry the onions and cook until lightly browned. Add salt, turmeric powder and chopped chillies and stir a little. Finally put in the potatoes and stir thoroughly. Cook in medium heat and keep covered for 4-5 minutes, stirring occasionally. Uncover the pan and mix well in full heat until the potatoes are fully cooked and slightly crispy on the outside. Add the fresh coriander leaves and stir for a further 1 minute.
Served with plain rice or lightly toasted pitta bread.
